"Followed recipie pretty closely for rub and sauce - smoked the wings over pretty hot (indirect) charcoal fire in my Brinkman Gourmet Charcoal Smoker - used 3 1/2 handfulls of Apple Wood Chips in a foil bag directly on coals. I use lump hardwood charcoal - great heat and burns for quite a while.
Smoked for 35 mins directly on racks. Moved to foil pans for another 20 mins. Covered pans with foil to bring up to 165+ degrees and prevent drying out(approx another 15-20 mins). Slathered with sauce and cooked uncovered for another 15 mins more. Served them up directly in foil pans - 5 lbs of wings were gone in under 20 mins!!
Big HIT with my family/friends at 4th of July party. Have been asked to make them again soon!
**I will probably doctor up the sauce a bit to get more heat from the BBQ sauce to compliment the Honey. Used Sweet Baby Ray's Sweet/Hot BBQ sauce.**
Anyone know a good HOT BBQ sauce with hefty kick??"
