"My review is also about the meat. It can be substituted in place of prosciutto. Take a thin slice of Bresaola and wrap around a blanched spear of asparagus. Drizzle with a little lemon juice, or good balsamic, a little olive oil and some shave Parmesan. Julienne and put in any good pasta recipe. Use on a salad or in risotto. A little goes a long way."
