Missing Ghee recipe, May 8, 2008
By Joskel

"#
# 1/4 cup ghee (see recipe below) or vegetable shortening
Sorry, but I do not find the recipe for ghee anywhere below.
Here is the recipe I have used successfully for years:
Ghee
Ingredients:
Pure unsalted Butter (not margarine)
Procedure:
1. Heat butter in a saucepan in medium heat until it begins to bubble.
2. Reduce heat to medium-low and cook uncovered until butter turns to a clear golden color. (Butter usually begins to boil with lots of bubbles. When it is done, it will have foam on top of it indicating that ghee is done. This foam will contain milk solids fom the butter. Remove and discard this foam and any milky solids that may be floating on the ghee.)
3. Cool it and store it in dry container. Use ghee in you regular cooking.
(Do not cook butter on too high a heat or it will brown and/or scorch. The flavor will not be a pleasant one and is not usable in most dishes.)
Have a great day.
