Easy Cucumber Salad,

"I tried this, eliminating the red pepper, as I cannot stand anything that numbs my taste buds. This is a great salad and an unusual way to use cucumbers. I will make this again and add some more veggies, such as celery, onion, and possibly carrot with the bell pepper and scallions...this would make it more of a salad that could be used alone with a meat or fish entree."
