Turn up the spices next time,

"This meal smelled great as it simmered all day, but the final product was a little disappointing. The flavor didn't match the aromas I enjoyed as it cooked. I would add salt next time and perhaps just use whole boneless, skinless thighs since the meat was a little dry. I might increase the garlic and herbs a bit as well. I will probably try one more time with some modifications."
