"Not sure what beef stock is doing in a lamb dish, certainly not for Hindus! The cream is excessive, it doesn't need the sweetness. And rogan josh means 'warming fat', alluding to the lack of water in the final product, which is mostly melted fat and succulent lamb/mutton/goat. The Hindu/Pandit version (this is a Muslin version) would not contain onions or garlic or root ginger, though it would contain ginger powder, fennel seed powder and asafoetida (hing)."
