"This is a very common Tuscan dish (I know because I live in Florence) which dates back to the 1400s: the Renaissance. The word "gnudo" is not an Italian word (nudo), it is Tuscan. This recipe is NOT a LIGURIAN dish. Liguria is another region in Italy, north-west of Tuscany and on the coast. It is known for the Italian Riviera, not Gnudi."
