"This really fit the bill in my search for a tasty, quick and healthy eggplant stir fry. I did make a couple changes/additions: substituted ground turkey for the pork, mirin instead of the sake (didn't have any) and lots of scallions, which I added towards the end. I ate this with brown rice and miso soup. I also sweated the eggplants with salt for 2 hours; this released most of the water in the eggplant, which eliminated the need for a lot of oil in the frying process."
