"Spaghetti al pesto is rarely made in Liguria. It is trenette al pesto.
The problem with innovation is the recognition that it is in fact ,innovation. Some one from another section of Italy that is un familiar with the dish will think that is how the dish was always made and of course Americans then claim this is how Italians make this dish. Let us have some clarity when discussing the cucina of whatever region. We can thereby begin to avoid the confusion that exists in the so-call cucinia Italiana."
