"Great healthy balanced meal packed with flavour! So many people see chicken as dull and tastless, but i dissagree. Chicken can be used in so many ways, i did modify this recipe on the second attempt at this dish... For me and my brother i used...
2 Chicken breasts, boned and skinned 1 Tin of low fat chicken and vegetable soup 1 1/2 cups of uncooked brown quick cook rice 1/2 Tin chopped plum tomatoes 4 Cherry tomatoes sliced in half 3 TBLSP tinned sweetcorn 2 TSP Mint sauce 2 Pinches of salt and ground black peppercorns
