This was my "let's make up" pie...., September 4, 2009

"I made the day after I realized that I had hurt a really good friend by making a very stupid remark, i I wanted to make this pie and sit down with a cup of coffee while saying "I am sorry..."

So, I made this pie today.
Unfortunately I did not have brandy at home, so I used Calvados instead.

Well, there is not a crumb left and I am afraid that I gained some weight after adding too much whipped cream.

This is one of those pies that one should not make every week, because it's too good... I never added "speculaas" kruiden, but it definitely added an extra touch.

Like Karin, I simply shape the dough with my hands. It looked rustic and home-made; and that's what this was about.

To me this was the perfect "let's not fight anymore, we love eachother too much" cake.... But of course... who needs a reason to make this cake, it's just pretty damn good."
