"My teenage son designed a gingerbread cathedral (do not allow impressionable teenagers to watch extreme baking shows on the Food Network--it gives them ideas) and I went searching for STRUCTURAL gingerbread. I doubled this recipe (almost 8 pounds of dough) and used all but an apricot-sized chunk for the 22 pieces we needed. This recipe is terrific! I will use it again and again and again for gingerbread houses (just hopefully never anything this large.) It's hard to roll out (go straight for a handle-less rolling pin,) but I had ZERO breakage during baking. It looks like gingerbread, it smells like gingerbread, and it handles like Masonite. Exactly what you want for building."
