"I like a quick start to pizza dough or rolls, sweet breads, etc.... the night before I bake I mix 1/2 cup flour and 1/4 cup water with 1/8 tsp. yeast and a dash of sugar in a bowl and let stand til the next day...

Using this starter requires less yeast and jump starts the dough the next day. I've never had much success with sour dough and maybe that's why I don't care for the long long wait for a not so great bread. A tsp. yeast will be sufficient for a 3+ cup flour recipe of dough using this starter recipe... Elizabeth W."
