"Hi! I am mexican and we do not add flour to the corn masa or masa harina at all, just the masa, salt and water (if it is masa harina, warm water) usually we do not use stock but its fine
If we add lard, then they are BOCOLES (gorditas de manteca)
And it is tipical the fillings of mexican scrambled eggs huevos a la mexicana, green scrambled eggs (huevo revueltos con salsa de chile verde) scrambled eggs with green chile salsa, scrambled eggs with chorizo, queso fresco (fresh cheese are delicious) or just whit some salsa mexicana
