"This was in fact extremely easy and fast not to mention very delicious. I did alter it a bit to make it more nutritious. I sauteed and added 1 small green pepper, 1 small red pepper, and a medium onion. Gotta sneak those veggies in there. Instead of making it in the microwave I baked it in the oven at 375 for about 20 minutes. For something fresh I added some scallions to the top. As a side dish I mixed one packet of Lipton's Spanish rice with a cup of brown rice then I added a can of sweet corn. There were no left overs:-)"
