"I omitted the shrimp in this recipe and added green and yellow pepper along with the red. I served it to a group of usually picky eaters and they loved it! It is also really pretty with all the colors from the pepper & pineapple. A second time I made it I traded the shrimp for cooked chicken breast. Excellent! This recipe (with out shrimp) is now one of my pregnancy cravings, I make large portions at a time so I have it when ever the craving hits :o)"
