"I was a little nervous about a lactose free cake, but this was fantastic!! Ive never used pineapple in a cake before but you could not even taste it. It was super moist and my boyfriend loves it! I added raisins to mine and some cardamon and nutmeg. My cooking time took longer so I put foil over the top when it started to brown so as not to burn and continued checking it til the tester came out clean. Will make this again!"
