Low-Carb But Still Delicious!,

"This ingredients were cheap, easy to find, and went together in minutes.
What I love: It is low-carb, low-cal, and if you use low-fat mayo, it is also low-fat. A totally guiltless recipe. With three diabetics in our household we are always looking for great-tasting, low-carb healthy foods that fill you up and this slaw fits the bill.
I love mixing two types of cabbage; it adds a visual punch that makes it more regal and less "just coleslaw." But the real treat was adding leeks. I love leeks but never once thought of adding them to slaw!
My kids "tolerate" traditional slaw but we rarely eat it because of added sugar. This recipe was not sweet and had a wonderful, but not overpowering taste more like salad.
I could not resist adding a shredded carrot, but the recipe stands alone without any help. I have made it twice now and had made it a permanent part of my low-carb lists of food!"
