fantastic seafood salad,

"The reason that this Silver Noodle Seafood Salad is so fantastic is actually two
fold. One because of the quality of ingredients....and two because of the
chef/author who developed the recipe out of her love for food, life in general, and
more importantly the generous make up she displays as a human being.
This little story begins as I was looking to find a alternate for spending $12.50
every day for lunch on a dish I couldn't live without. A wonderful new Thai Food
restaurant moved into town, and as fate would have it, "a salad appeared on the menu
in front of me," that I had never heard of, let alone tried. My server person was in
fact the Chef/owner as well, and humbly instilled faith in me as to her (personal)
preparation for this delicacy. Needless to say I literally found myself returning
everyday for over a month to get my daily Silver Noodle Seafood Salad fix. This
obviously became excessive behavior for various reasons, for which I will spare you
the pain of explanation.
After multitudes of unsuccessful attempts at research via Internet, carrier pigeon
and the like, about.com and your good friend (and my new found savior) Darlene came
to the rescue. After waaaaaay to much time patiently counseling me with
my plight exclaimed, (via email) "you know if you can give me some semblance of a description of
the dish I will develop a recipe." Yeah Right!!!!!
The rest is history... I have broken the vicious cycle, and my life is back to normal.
I now have a much improved recipe over the original Silver Noodle Seafood
Salad...... and the bottom line on the ledger sheet is now allowing me to actually
take vacations to Thailand rather than merely eat lunch at a local eatery on a daily
basis.
The key to this overwhelming success of this recipe starts with the quality of
ingredients which Darlene chooses (like all her recipes) and ends with the
simplistic step by step instruction (which even I can follow) to produce the most
wonderful piece of edible artwork (photo included) that is frankly........to live
for.
I think you will be pleased."
