"Our kids (aged 2 and 5) had given up on eating my normal preparation of salmon (BBQ'd in tinfoil with a creamy dill salad dressing marinade) so I decided to try this recipe.

I'm also following Weight Watchers and was looking for a delicious way to prepare salmon (I'm not a fish lover) and this is it! My kids devoured their portions and I truly couldn't tell I was eating fish.

Unfortunately, i didn't have fresh ginger on hand so I used about 1/2 tsp of dried ginger, and I also didn't have any scallions so I omitted them. It was truly delicious, and this will be my new salmon recipe!"
