Great mid-week meal, October 9, 2007

"It takes a little time to make (there's cooking the rice, cutting the veggies, etc.), but if you use some canned substitutes (i.e. canned peas and canned pineapples) then the cooking process moves a little faster. I serve with a side of veggies. This makes for a hearty and tasty vegetarian meal."
