Will Not Use Again--Often, December 29, 2008

"I used it to bake some Mexican conchas, replacing the 3 tsp of yeast with 1.5 tsp of baking soda and lemon juice each. Although the conchas did rise somewhat, I realized to my dismay that nothing--NOTHING--can replace the flavor, scent, and ultimate texture that yeast provides; the conchas came out with a sort of flat, cardboard taste (and feel) that simply wasn't the case with my other attempts.

Should I ever need a quick fix, I guess this will be my go-to substitution, but if I can help it, I'll be sticking with yeast. Although this substitution did reduce the rise time, it also reduced the taste."
