As Authentic As it Gets!,

"My family is originally from Spadafora (ME) and a few years ago I went for an extended stay and worked in my uncles restaurant. Oftentimes we wouldn't close down till 2 or 3 am; during those nights we often made spedini for a very late quick dinner. A small wedge of fresh buffalo mozzarella was placed inside the rolled up veal, in addition to the breadcrumbs and pecchorino. Served with a squrit of lemon and my stomach was always more than grateful! It's my personal favorite, so I'm glad to see it available here."
