Yummy, healthy, and easy to modify!, August 17, 2009

"I've made this lasagna several times now, and it's been great each time. I suggest a few modifications to taste: I like to add a small can of black olives, a chopped red bell pepper, or artichoke hearts. I also tend to use a little more ricotta and spinach than it calls for. I use the whole can of tomato paste (because why not?). I even added some soy protein crumbles once (fake meatballs that I broke up), and it was delicious. Crushed red pepper flakes are a good spice to add as well. I tend to leave out the celery.

This recipe reheats well--I take it to work for lunch the next day or two--but I've never tried freezing it (it doesn't stick around long once made; too tasty)."
