"This was my first time making ribs, but you wouldn't know it from the result. It took about 3.25 hours of cooking (2 slabs of pork baby back ribs) using my trusty charcoal weber, but wow, they were just as good as restaurant ribs (or better). Not bad for my first try! I used hickory chips and I did use the four box system described here on bbq.about.com to cook the ribs. I did not change the recipe of the rub (Best Odds Rib Rub) at all. I did massage in the rub the night before and then wrapped the ribs in plastic wrap and just let them rest all night. I found that using the back of a metal spoon worked best for applying the rub. I did end up coating them too much as they had a spicy crust so after 2 hours of cooking, I brushed off what remained and used (liberally) a simple mop of apple cider vinegar, water, and brown sugar for the last hour and a bit to help with moisture and too try and help rinse off the excess rub. The ribs were excellent and there was no need for bbq sauce as they had tremendous flavor on their own and they were very moist. I will most certainly make this again, probably next weekend."
