"I made this curry for a luncheon and my guests loved it! The recipe was straightforward, and easy. And best of all, it hardly took any prep time. That left me more than relaxed to make my siders. I served it with rice, steamed wonton and beanspout salad. The meal turned out to be light, yet delicious. The only addition I made was to add more vegetables like fresh Mushrooms and bamboo shoots to the curry..Also, I made the dish a day prior to the luncheon, so it sat in the refrigerator for the night and tasted even nicer the next day!"
