"I was trying to decide what to do with a spare chunk of kabocha in my fridge when I came across this recipe. It seemed like an odd combination, but I gave it a try, and I was surprised by how tasty it was! This salad is very strong and sharp in flavor (you can try soaking the onions a little longer if it's too sharp the first time), but it's definitely delicious!"
