Good side dish,

"I have used this recipe twice, the first time exactly as specified and it turned out very good served with a spicy fish dish.
The second time I made this I was having a more subdued main so I added cajun spice mix onto the baked plantain to add some flavour.
A versatile recipe you can play with."
