"This recipe is a much simpler version of one I have used for years and tastes wonderful. It is perfect for people that are new to wild game or are afraid of the possible "gamey" taste. I prefer mine cooked to no more than medium. Another way to help eliminate the "wild" taste is to marinade the meat for 4 to 5 hours in a dry wine with just a little lemon juice.
While the recipe is a must try, I have to correct the opening paragragh. I have been hunting in Germany for years and am proad to be called a Jäger. Hunting is never done over bait. That is unethical and illegal. The Rotwild or Red deer are hunted from June or August (depending on size, age and sex) thru February. The Rehwild or Roe deer are harvested from May 16th thru February. Again depending on size, age and sex. The Reh buck season ends in October so we cannot hunt them during the fall.
Personally, I prefer the Reh over the Rotwild. The meat tends to be much more tender and is packed with flavor.
We hunters get enough grief from the animal rights people. I just wanted to get the record straight."
