"Here's the mistake people commonly make, and it's the fault of grocers. London Broil is NOT a cut of meat, it is a recipe, a preparation. What meat departments are calling london broil is actually round steak, which is not a very appropriate cut for broiling, as it tends to be tough. London Broil is traditionally made from flank steak, which is marinated, flame-broiled, sliced thin against the grain and served with a sauce like a hollandaise or a bordelaise."
