Not really a Hungarian goulash, February 17, 2008

"Actually, the worst thing that can happen to a goulash is ketchup put into it, so I suggest that you forget it. Hungarians put tomato into goulash. Sugar is also something that makes it "un-Hungarian". You don't need mustard either.
The way we - Hungarians do it:
* Have the meat cut into one-inch cubes.
* Boil the fat or oil, then brown the onions and add meat to it. If you want to eat a real goulash, NEVER add any water since the fluid coming out of the meat will be enough. Then you can add tomato and green paprika, some salt and a teaspoon or two of hungarian paprika.
* I could never eat goulash with rice. We have special noodles or boiled potatoes for garnishing. Sometimes we don't garnish it at all; then we eat it with white bread.

Well... It is not the healthiest food in the world, but when people try to cook it in a healthy way, they get something very different from Hungarian goulash.

If you want to add water to it, then I recommend that you search for a Hungarian goulash soup recipe (written by someone from Hungary); because as soon as you add any water to your goulash, it is not goulash any more, you should finish your job and make some goulash soup of it."
