other use for mushroom duxelles,

"made up this mushroom duxelles and it was awsome in flavour, this got me thinking...
The classic of chicken, bacon and mushroom carbonarra!
tkae a medium chicken breast and place between two sheets of cling film and at it till about 5mm thick, then place 4 rashers of streaky bacon, layerd over each other slightly, in between 2 sheets of cling film and roll thin with a rolling pin, place the chicken breast on top of the acon ad then stuff with the mushroom, roll this up to make a rough ballontine, cling film plenty of times, your bout to poach!!
bring a pan of water to a rolling boil and poach the stuffed chicken breast for approx 30 mins.
while doing this, cook your chosn pasta as the instructions, drain, when cooked and toss min good olive oil, to prevent it sticking together. warm your carbonnara sauce, hope made if you can, then add the pasta to warm through, add a handfull of chopped, fresh parsley and then plate.
Take your poached chicken, slice evenly in to an odd numer of slices, looks better to the eye! and place on top of the pasta, garnish with a sprig of chervil
