"This roast melts in your mouth so there is little need for the knife. I always had trouble with my roasts being too dry for my liking. This one isn't. I am getting ready to make it for the second time today. I put about 1/2 cup of water in the bottom of the pan as well. I actually got the original recipe from the Catholic Digest and couldn't find the recipe and decided to search here and was lucky enough to find it."
