"I had some smoked scamorza from the Italian market so I searched your site for a recipe to use. I made this recipe but had to substitute whole wheat fettuccini for the pizzoccheri (no whole wheat tagliatelle available locally here either). Regardless, it was very good. The smoky cheese, mushrooms and the sage are heavenly. I'll need to look for pizzoccheri or tagliatelle the next time I get to the market to buy more scamorza."
