"My wife doesn't like oven baked turkey--she only likes smoked turkey until now. This was a very easy recipe and the turkey came out great. In our 13 years of doing Thanksgiving, this was the first year that our Turkey was gone in 2 days---no left overs as of this writing! It took some time to balance the turkey, but once I got that done I just walked away and checked on it every so often---no need to constantly watch it. The skin came out perfectly golden and was crunchy. I used a smoke box and with Mesquite wood chips to add a little more Texas flavor; I find that Hickory smoke is way too strong if you want to recycle the Turkey meat in Turkey salad or pasta recipes. The Mesquite (just a little bit of the flavor) will still work in those recipes. Kudos to the author of this recipe---I've saving this for next year!"
