Fantastic dish,

"I've been looking for a good chole recipe that comes close to what I can get at my local Lahori restaurants for some time without much success. Most of those I've found have either been so simplified that they lose the complexity of the seasoning or so heavily spiced that the flavors become muddy. I made this one last night and had it for lunch today and it's the best by far. The spices were well balanced and intense with out being overpowering.
The only compromises I made were that, because I was short one onion, I left out the browned onion slices that the recipe called for, and I included a cinnamon stick in the initial whole spice mix.
My wife, Susie, called me at work to tell me how good this was and I think I could hear her licking her bowl as we spoke, the ultimate test of cooking success in our house.
I will definitely make this again."
