Great flexible sauce,

"My wife and I just came back from a two week vacation in Thailand. I didn't know how good Thai food was until being in the country. Since we returned, I've been trying to fix something interesting at least once a week. This week, I found this recipe and decided to give it a try. The twist on the fish that I added was using Canadian Walleye which is our favorite fish. The sauce recipe is superb. It is easy to adjust it so it is less spicy, sweeter or more sour. That is really important since my wife doesn't like anything very spicy but I do as well as both of my son-in-laws. It's pretty easy to split the sauce and then add more of either red pepper, lime juice or sugar to achieve the "just right" sauce for anyone!"
