"Great recipe, well written, intelligent. I like that you include the ratio of nuka to salt (7/1). That allows intelligent people to think for themselves and create their own recipe, based on that base ratio. That and that alone seems key to the recipe, other flavoring agents (togarishi, shoga, niniku, etc) are subjective, up to the taste of the cook. I've seen beer added, also dried fish, nihon-shu, etc. Thank you, keep it up!"
