"I've made this many times for the past 35 years. I was afraid the first time, but keeping the can under water at all times seems safe enough. I've never had a problem. It's so delicious! I've even used the resulting caramel in vanilla ice cream to make dulce de leche swirls and it's wonderful! I just boil the can for about 4 or 5 hours so it isn't as firm and just mix swirls into semi soft ice cream and refreeze it. I highly recommend this! I think I have to do it again for this weekend!
If you boil the can for only about 4 or 5 hours and it's still a little softer, you can spread it on a flour tortilla, and lay a lengthwise half of a banana on it...and put a dollop of whipped cream on it and roll it up and drop another dollop of whipped cream on it....it's decadent! I've served it for a dinner party dessert and it was a huge hit!"
