Huevos Rancheros - Variations on a Theme, June 4, 2009

"I love this simple recipe and made a few substitutions and additions based on what I had available:
Olive Oil
1 or 2 Whole Wheat Tortillas (from Trader Joe's)
2 or 3 eggs (Brown cage free from Whole Foods)
Parmesan Cheese (2 tablespoons Shredded - Bel Gioioso)
3/4 cup Salsa (Trader Joe's Medium Hot)
Shitake Mushrooms (4 large sliced and sauteed in olive oil)
Baby Argula (cilentro is traditional but I didn't have any)

Heat the tortillas in the oven at 160 degrees for a few minutes
Saute the shitake mushrooms in a skillet with about a teaspoon of olive oil (and put aside),
briefly heat the tortillas in the remaining olive oil about a minute on each side.
Put tortillas back on heated plate in 160 degree oven
Fry eggs in olive oil as you like them (I fried lightly on both sides, still a little runny)
Once ready put eggs on top of tortilla(s), add the shredded cheese, briefly heated salsa, mushrooms and arugula on top
You may want to add some fresh ground black pepper.
This is a perfect, easy and fun to prepare, high protein breakfast that is simply delicious!!!"
