one of my favorite meals,

"My family and I look forward to this breakfast since everyone loves it except we put our own twist on it.... I place the bolillo halves (cut sides up) in the oven after buttering the cut sides. when toasty, I spread refried beans and monterrey jack or Oaxaca cheese and return to oven to melt cheese. Then when melted, I take out and add huevo en torta, then bacon....add some salsa or crema mexicana and voila...the best breakfast ever!"
