"Chef,
Great recipe I use the same one, the only difference is I cook the cheese cake in a water bath. I find this really helps to avoid cracks. I know you know this already but I'd thought I would share with the rest of the class. Keep up the recipes they are great! I recently made your recipe for ox tail soup truly incredible flavor.
