"I've tried lots of fried rice recipes, but this one tops them. Now whenever i have leftover rice, i put it in the refrigerator and leave it there for as many days as i can. I find that taking the lid off the night before helps dry it out, as the tip in the recipe suggests. I always add a little extra fish sauce at the end which makes it perfect. If there's any leftover roasted chicken hanging around, i add that too. LOVE it, and so do my 2 kids."
