"As the rest of the nation is at the seasonal peppered sheep-and-baggage stew, cavolo is cheap, and I am not sure where to find Savoy. So I buy one, presteam a chopped-up quart of it (cavolo) as substitute for pasta, not very different from your cavolo verza in umido. Pecorino and oil on top. a quart (cavolo) a day keeps the doctor away. I am now on my third (quart) day, one to go."
