Buttermilk Buckwheat Pancakes,

"I loved this recipe, but I didn't make it exactly the same way. I wrote down the ingredients, but not the instructions. When I started to make the pancakes, I couldn't figure out why the extra '1/1-2 cups skim milk' and 'vanilla' at the bottom, since the consistence was good without the extra skim milk, so I didn't add it. The only other changes were a whole egg instead of egg white, and I added 1 teasp. of cinnamon and also 2 tbls of vanilla. I substituted ground flax seed for the guar gum. They turned out really good, lots of flavor with the vanilla and cinnamon. I cooked up the entire batch, ate a couple, then laid the rest on a cookie sheet in the freezer for about 1 hour (this is so they don't stick together when I want to use them later). When they were semi frozen, I put them in freezer bags and when I want one, I just pop it in the toaster. Great recipe!!"
