"However, allow more prep time and cook time than indicated on "At a Glance". Read the steps carefully in advance; then back into what time you estimate you will need. You will not want to finish cooking this dish until you are ready to serve it because the snow peas may get a little soggy. I served this over jasmine rice as a main dish and it was great! The fresh ginger root and curry were a delicious combination. I also offered crispy rice noodles (the kind in a can) to sprinkle on top. This is a recipe you will want to keep."
