Best Thai Green Curry Paste!, November 10, 2009

"This has become my standard green curry paste (after trying numerous other recipes that I wasn't happy with). I use a mini-chopper to make it (don't have a food processor or pestle & mortar) and it works just great! Since my chopper can't hold much, I add very little coconut milk, just 1-2 Tbsp - instead I save it for making the curry. One tip: don't omit the shrimp paste. Yes, it does smell, but I find it 'makes' the paste. I'll never buy packaged green curry paste again!"
