"I made this vegan king cake last night, and it's amazing. The taste is authentic, the dough is fluffy, the filling is to-die-for, and the whole thing is so beautiful that we almost didn't want to eat it. I've never made a cake/pastry that was this artistic! :)
It doesn't take terribly long to make, relative to other cakes/pastries, and doesn't have any weird ingredients (like silken tofu, which I've never had very good luck with when baking). I followed the directions but made one exception -- we didn't have any coconut milk, so I used soymilk instead, with no problems. The only misprint in the directions is that prep time should be "1 hour, much of it inactive," because you have to wait that long for the dough to rise.
Highly recommended for those interested in making a vegan king cake. You won't be disappointed!"
