Great with Minor Variations,

"I made a couple of changes: coating the cod with a thin layer of mayonnaise then Panko on all sides; adding more white wine before baking; and adding the cheese (freshly-grated Emmenthal and Gruyere) when I removed the foil. This mixture doesn't brown very well, but the effect is delicious! If a bit more "zing" is wanted, either adding a bit of dijon mustard to the mayonnaise or sprinkling with lemon juice and zest would kick it up a bit.
This is a great adult recipe--not for kids only!"
