"My wife is a huge pad Thai fan, but usually we can't be bothered making it. But now i'm a changed man - no more take-out pad thai! One tip: turn down the heat at the end when stir-frying the noodles, as you don't want them to burn. I didn't think they were going to get to the soft and chewy stage, but they did after about 6 minutes. I made extra sauce and kept adding it to make the noodles full of flavor."
